
Summer is calling! We have reached the three digits season in Arizona and I needed something to cheer me up! This Nectarine, Arugula & Prosciutto salad will be it!
Prosciutto is one of my favorite ingredients and for sure one of the foods I missed the most when I was pregnant. It goes so well with arugula that I could just eat a big bowl of these two ingredients alone. But if you combine it to thinly sliced nectarines, feta cheese and pumpkin seeds, this is just the perfect summer salad.
When I use feta cheese on a salad I like to “season” it on the side. For this salad I added one tbsp. of olive oil, salt and red pepper. Just toss it all together in a small bowl before topping your salad. You can also go for the store bought version of seasoned feta, they always have plenty of options, from garlic to herbs.
Serve this salad fresh with dressing on top or on the side. This is a great salad to serve as a side for grilled chicken and a glass of Petite Sirah (why not?).

Nectarine, Arugula and Prosciutto Salad
Ingredients
- 2.5 oz Baby arugula
- 2 nectarines (ripe, thin slices)
- 1/3 cup Feta cheese
- 2 tbsp Pumpkin seeds
- 2 oz Prosciutto thin slices
Dressing
- 1 tbsp honey
- 2 tbsp Balsamic vinegar
- 1 tbsp olive oil extra virgin
- salt and pepper to taste
Instructions
- Toss all the ingredients in a large bowl until combined.Prepare the dressing by whisking all ingredients together and top off the salad right before serving or serve it on the side.
